Description 2-decenal, also known as T-2-dca or trans-dec-2-enal, is a member of the class of compounds known as medium-chain aldehydes. Medium-chain aldehydes are an aldehyde with a chain length containing between 6 and 12 carbon atoms. Thus, 2-decenal is considered to be a fatty aldehyde lipid molecule. 2-decenal is practically insoluble (in water) and an extremely weak basic (essentially neutral) compound (based on its pKa). 2-decenal is an aldehydic, fatty, and floral tasting compound and can be found in a number of food items such as herbs and spices, potato, cereals and cereal products, and nuts, which makes 2-decenal a potential biomarker for the consumption of these food products.
