Description (-)-trans-pinocarveol, also known as (-)-trans-2(10)-pinen-3-ol or (1s,3r,5s)-(-)-2(10)-pinen-3-ol, is a member of the class of compounds known as bicyclic monoterpenoids. Bicyclic monoterpenoids are monoterpenoids containing exactly 2 rings, which are fused to each other (-)-trans-pinocarveol is slightly soluble (in water) and an extremely weak acidic compound (based on its pKa). (-)-trans-pinocarveol can be found in a number of food items such as cumin, sweet bay, pepper (spice), and common sage, which makes (-)-trans-pinocarveol a potential biomarker for the consumption of these food products.
